Our toddler absolutely loves pancakes (honestly, who doesn’t!?). I always make sweet healthy pancakes for breakfast on Sunday mornings, but yesterday I wanted to make a savory version for Gabriel’s lunch full of veggies. I decided to grate zucchini — one of his favorite vegetables

The apricots this year have been extra-juicy and sweet, making them the perfect fruits to turn into a sweet cake for brunch or dessert. I’ve been buying buckets and buckets of apricots since they are one of Gabriel’s favorite fruits and have been turning them

Whenever I’m craving cheesy pasta but want something lighter, I make a vegetable gratin. Less caloric (because there’s no pasta) but cheesy and full of flavor nonetheless, vegetable gratins make great lunches with a light salad or can also be served as a side dish for dinner.
