- 1.5 pounds (680g) canned corn, drained
- 3 eggs
- ⅓ cup heavy cream
- 1 teaspoon vanilla extract
- 3 tablespoons butter or margarine, softened
- 2 tablespoons granulated sugar
- 3 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- Preheat oven to 350°F/180°C and grease and flour a square Pyrex dish.
- Combine all ingredients in a food processor.
- Pulse for 1 minute until all ingredients are well combined.
- Pour the mixture into the Pyrex and bake for 40 minutes. Check for doneness by inserting a toothpick in the center of the quiche. If it comes out clean, it is ready!
MAKE IT DAIRY FREE: substitute the butter for margarine and choose a dairy-free cream
