cooked mushroom and caramelized onion salad

Ingredients
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 teaspoons honey, divided
  • 3 tablespoons chopped fresh coriander
  • 500g white button mushrooms, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste
Instructions
  1. In a large skillet, heat the olive oil over medium-low heat.
  2. Cut the onion in quarters and thinly slice each quarter. Cook the onion in the olive oil for 7 to 10 minutes, stirring often, until it starts to become slightly golden.
  3. Add 1 teaspoon of the honey and the fresh coriander and cook for 3 more minutes, stirring constantly.
  4. Add the mushrooms and soy sauce, mix to combine, and let simmer for 10 minutes until all the liquid from the mushrooms evaporates.
  5. Add the balsamic vinegar, the remaining 1 teaspoon of honey, salt and pepper and mix to combine. Cook for 2 more minutes.
  6. Set aside to cool. Serve at room temperature
