healthy carrot walnut bread

Ingredients
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon grated nutmeg
  • Pinch of salt
  • 1 medium carrot, grated (makes 1 cup)
  • 1 medium ripe banana, mashed
  • 1 egg, lightly beaten
  • ½ cup milk (almond milk, coconut milk, regular milk)
  • ½ cup maple syrup or honey
  • ½ cup + 2 tablespoons coconut oil or vegetable oil
  • Chopped walnuts (for topping)
Instructions
  1. Preheat oven to 375°F/180°C and grease and flour a loaf pan.
  2. Combine whole wheat flour, baking soda, baking powder, cinnamon, nutmeg and salt in a large mixing bowl.
  3. In a medium mixing bowl, combine the grated carrot, mashed banana, egg, milk, vanilla extract, maple syrup and oil. Pour the contents of the bowl into the big bowl with the dry ingredients and mix to combine with a wooden spoon.
  4. Pour the mixture into prepared loaf pan and decorate the top with chopped walnuts.
  5. Bake for 35 to 40 minutes until a toothpick inserted in the middle of the bread comes out clean. Let cool in the loaf pan before inverting the bread onto a plate.
