spiced orange cauliflower soup

Ingredients
  • 2 tablespoons vegetable oil
  • 1 leek, washed, trimmed and chopped
  • 2 garlic cloves, chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • 1 orange cauliflower head (about 1kg), chopped into florets
  • 3 cups vegetable broth
  • ½ cup coconut milk
  • Salt and pepper to taste
  • Chopped fresh coriander to garnish
Instructions
  1. Heat vegetable oil in a large saucepan over medium-high heat. Cook the leek for 8 to 10 minutes until soft. Add the garlic, ground cumin, turmeric and coriander and cook for 1 more minute.
  2. Add the chopped cauliflower and the vegetable broth. Bring to a boil, cover, and simmer for 30 minutes until the cauliflower is tender.
  3. Add the coconut milk and purée the soup with an immersion blender. Adjust seasoning with salt and pepper to taste.
  4. Serve the soup in individual bowls garnished with chopped coriander.
