Ingredients
Ingredients for roasting the butternut squash
  • 1kg butternut squash
  • 2 tablespoons olive oil
  • Nutmeg
  • Salt
  • Pepper
Ingredients for the mash
  • 2 teaspoons truffle oil
  • Fleur de sel
  • Black pepper
Instructions
  1. Preheat oven to 200°C/390°F and line a roasting tray with aluminium foil.
  2. Slice the butternut squash in half and scoop out the seeds. Place the two slices on the roasting tray and drizzle 1 tablespoon olive oil on each half. Season with nutmeg, salt and pepper and roast for 50 minutes to 1 hour until golden and completely soft.
  3. Scoop out the butternut squash flesh onto a plate and mash it with the truffle oil, fleur de sel and black pepper. Serve warm.
