cooked bell pepper and green olive salad

Ingredients
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 2 red bell peppers, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 10 green olives, pitted and chopped
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • Black pepper to taste
  • 4 tablespoons tomato purée
  • 1 bay leaf
Instructions
  1. Heat the olive oil in a medium saucepan over medium-high heat. Fry the onion until softened, about 5 minutes. Add the peppers and cover the saucepan, cooking the vegetables on medium-low heat until they softened, about 10 minutes.
  2. Add the tomatoes, olives, salt, ground cumin, black pepper, tomato purée and bay leaf. Mix to combine. Cover and reduce heat to low. Let simmer for 25 to 30 minutes until all the vegetables are soft and cooked through.
  3. Remove the bay leaf and serve at room temperature or warm.
