- 1kg carrots, peeled and cut into 0.5cm coins
- 3 tablespoons olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tablespoon white wine vinegar
- 1 teaspoon granulated sugar
- ½ teaspoon ground coriander
- ¼ teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 small preserved lemon*, skin chopped
- Fresh coriander, chopped
- Salt and pepper, to taste
- Boil water with salt in a pot. Add the carrots, cover, and simmer for 10 to 12 minutes until the carrots soften but still have a slight crunch. Drain and set aside.
- While the carrots are cooking, heat the olive oil in a large skillet. Cook the onions for 5 to 7 minutes, until they begin to golden, then add in the rest of the ingredients including the cooked carrots. Cook for another 5 minutes, stirring from time to time. Adjust seasoning if needed.
- Serve warm or at room temperature.
*If you don't have preserved lemons, you may replace them with lemon zest (about 1 teaspoon).
