honey soy glazed baby carrots

Ingredients
  • 400g baby carrots
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 1 ½ tablespoons honey
  • A handful of fresh coriander, chopped (optional)
Instructions
  1. Bring a saucepan full of water to a boil.
  2. Peel the carrots and chop off a bit of the tops and ends. Boil the carrots for 8 to 10 minutes until tender. Drain.
  3. Wash out the saucepan. Heat the vegetable oil on medium-high heat. Add the carrots and soy sauce and stir-fry until they get a nice brown color, about 2 minutes. Add the honey and stir-fry for another 2 minutes until glazed.
  4. Serve topped with chopped coriander, if using.
