ginger lemon basmati rice

Ingredients
  • 1 cup basmati rice, uncooked and rinsed
  • 2 cups water
  • Pinch of salt
  • ½ teaspoon grated fresh ginger
  • Zest grated from 1 lemon
  • 3 tablespoons chopped fresh coriander
Instructions
  1. Combine the basmati rice, water, salt, ginger and lemon in a medium saucepan and bring to a boil. Cover, reduce heat to low and let simmer for 15 minutes until the rice is cooked through.
  2. Stir in the coriander and serve.
