ginger lemon basmati rice |

- 1 cup basmati rice, uncooked and rinsed
- 2 cups water
- Pinch of salt
- ½ teaspoon grated fresh ginger
- Zest grated from 1 lemon
- 3 tablespoons chopped fresh coriander
- Combine the basmati rice, water, salt, ginger and lemon in a medium saucepan and bring to a boil. Cover, reduce heat to low and let simmer for 15 minutes until the rice is cooked through.
- Stir in the coriander and serve.
