Ingredients
Ingredients for marinade
  • 2 tablespoons rice vinegar
  • 5 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon peeled and thinly diced fresh ginger
  • ½ teaspoon chili pepper flakes
  • ⅛ teaspoon ground cumin
Ingredients for stir-fry
  • 500g sliced top sirloin steak
  • 2 tablespoons peanut oil (or vegetable oil*)
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 garlic cloves, thinly sliced
  • 3 tablespoons diced green onion, white part
  • A handful of fresh coriander, chopped (optional)
Instructions
  1. Combine all the ingredients for the marinade. Pour the marinade over the beef, cover and refrigerate for at least 30 minutes, but I find it best when the meat marinates for 3 hours.
  2. In a large skillet or wok, heat the oil over high heat. When the pan is smoking hot, add the beef with the marinade and stir-fry for 2 to 5 minutes until cooked through. Set aside.
  3. In a small bowl, mix together the cornstarch and water.
  4. Stir-fry the garlic and the green onion until translucent and fragrant. Add the beef back to the skillet and pour the cornstarch mixture over it. Mix to combine and heat through until sauce thickens a bit. Remove skillet from heat source, top with coriander if using and serve immediately.
