coconut basmati rice

Ingredients
  • 1 ½ cup basmati rice, rinsed
  • ½ cup coconut milk
  • 1 tablespoon vegetable stock powder
  • 2½ cups water
  • 1 tablespoon vegetable oil
  • Zest of half a lemon
  • A handful of fresh coriander, thinly chopped
Instructions
  1. In a medium saucepan, combine the basmati rice, coconut milk, vegetable stock, water and vegetable oil. Cover and bring to a boil. Reduce heat to low and simmer for 15 minutes until the rice is ready and fluffy.
  2. Remove the saucepan from the heat and stir in the lemon zest and coriander. Serve.
