chicken patties with tomato sauce

Ingredients
  • 1kg ground chicken breast
  • 1 small zucchini, peeled and grated
  • 2 ½ tablespoons matsa meal or breadcrumbs
  • 2 tablespoons chicken stock powder
  • 1 egg, lightly beaten
  • Pinch of black pepper
  • 2 tablespoons olive oil
  • 2 garlic cloves, thinly sliced
  • 1 medium onion, diced
  • 4 tablespoons tomato paste
  • 1 cup water
  • ½ teaspoon mild paprika
  • ½ teaspoon turmeric
Instructions
  1. In a large mixing bowl, combine ground chicken, zucchini, matsa meal, chicken stock powder, egg and black pepper. Mix with hands to combine. If it seems too watery, add a bit more matsa meal. The mixture should be sticky and wet so that the chicken doesn't dry out. Form patties and set aside.
  2. Heat olive oil in a large skillet on medium-high heat. Fry the chicken patties on both sides until golden, about 5 minutes per side, just to give them some color. Do so in two batches if you don't have enough space in the skillet. Add the garlic and onion, and fry for 1 more minute until fragrant.
  3. Dilute the tomato paste in the cup of water and pour over the chicken patties. Season with paprika and turmeric, lower heat and let simmer for 15 minutes until cooked through.
  4. Serve the patties topped with tomato sauce.
Notes
CAN BE PREPARED IN ADVANCE: Cook and store in a tupperware in the refrigerator. The patties taste even better the next day as they sit in the tomato sauce. Reheat in a skillet and serve warm.
